Easy autumn salad with pumpkin

You can whip up a delicious salad from leftover roasted pumpkin in just a few minutes. This delicacy is perfect for a light dinner or even a snack. If you leave out the pumpkin seed oil, it only has 156 calories. The recipe is simple:

  • Choose cheese! Roasted pumpkin also goes well with creamier cheeses. If you are on a diet, choose low-fat cheeses such as feta or mozzarella.
  • Add salad! Add spicy arugula or baby spinach to the salad.
  • Add seeds! A little roasted walnuts or pumpkin seeds go well with the salad.
  • Add oil if necessary! You can also drizzle a few drops of pumpkin seed oil on top. You can read about healthy fats here.
