A sweet fluffy pancake – Kaiserschmarrn
Vith plums

Kaiserschmarrn (also known as smarni) is a great choice if you want a quick sweet treat. It can be served as a dessert or even for breakfast. Since one serving contains 49 grams of carbohydrates, it is worth having several servings if you eat it as a snack. In this recipe, I used autumn ingredients: I paired it with plums and plum jam, but you can use any other jam you like. Peaches and strawberries also go well with it. I think it tastes best when mixed with a little jam. Give it a try!
Tip: I recommend baking the amount specified in the recipe in two batches. It will fit in one pan, but it will be much crispier if you work with less batter at a time.


A sweet fluffy pancake – Kaiserschmarrn
With plums
Ingredients
- 120 g whole wheat flour (brown rice flour or oat flour is also fine)
- 70 g xylitol
- 1 pinch salt
- 200 ml milk
- 30 ml cooking cream (or Double Cream)
- 4 db eggs
- 25 g butter
To serve:
- 4 ripe plums
- 2 pinches ground cinnamon
- 100 g szilvalekvár sugar-free plum jam
Instructions
- Wash the plums and remove the pits. Dice the flesh. Sprinkle with ground cinnamon and, if not sweet enough, a little xylitol. Set aside.
- Pour the flour into a large mixing bowl. Add the xylitol and a pinch of salt. Mix well. Set aside.
- Take two mixing bowls and separate the eggs into them. Put the yolks in one bowl and the whites in another.
- Add the cooking cream and milk to the egg yolks. Mix thoroughly, then pour into the flour mixture. Mix until smooth.
- Beat the egg whites until stiff, then fold them into the mixture.
- Bake the mixture in two batches, as this will make it easier to turn and will also make it crispier.
- Heat half of the butter in a large frying pan and spread it evenly. Pour in half of the batter. Cook for a few minutes (without stirring or shaking). When you see that the edges are golden brown, flip it over with a wooden spoon, as if you were flipping a pancake. Use the wooden spoon to tear the baked dough into pieces. Add the prepared plums and a little plum jam to improve the flavor. Bake for another minute, then turn out onto a plate.
- Bake the other half of the dough as well.
- Serve lukewarm with plum jam.
