Greek Pasta Salad
Serve it in a glass – it looks so much more elegant!

Greek pasta salad can also be served in a glass. At a garden or barbecue party, this is a visually striking way to present a side dish – basically Greek salad mixed with pasta. Each guest gets a glass alongside grilled meat or fish, and you’re done.
Beyond parties, I recommend this light salad for a weekday dinner. You can use any pasta you can find in a durum wheat version. For this recipe, I chose my new favorite, rice-shaped kritharaki pasta (also known as orzo). I also recommend this pasta for another recipe: Greek One-Pot Meal: Chicken and Vegetable Kritharaki Pasta.

Greek pasta
Kritharaki pasta is a very popular ingredient in Greek cuisine. It’s perfect for one-pot dishes with beef or poultry, and it also works wonderfully in baked dishes and pasta salads.
Kritharaki is made from durum wheat flour. Pastas made from durum hold their shape better during cooking and have a lower impact on blood sugar, which can support fat burning.
This pasta appears in several Mediterranean countries under different names. In Italy, for example, it’s known as orzo
