Sugar-free plum cream soup with chocolate shavings
Simple dessert or a special appetizer

Sugar-free plum cream soup is easy to make and can also be served as a dessert. I love plums, which are both tart and sweet, fresh and raw. This year, however, I had a large batch left over, which had been waiting in the refrigerator for a long time. I pitted them and put them in a small pot with cinnamon and erythritol. I cooked them a little, then blended them and topped them with cream. I think it turned out quite creamy, but if you like it thicker, you can mix the cream with a spoonful of oat flour. I recommend eating it cold. A bowl of cold soup was especially welcome during this Indian summer. The chocolate shavings are a delicious flavoring and garnish for the soup. Give it a try!

Sugar-free plum cream soup with chocolate shavings
Ingredients
- 220 g pitted plums
- 200 ml water
- 2-3 tablespoons erythritol (depending on how sweet you like it – if you can fit it into your calorie allowance, you can also use honey)
- 1 pinch cinnamon
- 120 ml cooking cream
- I grated a cube of dark chocolate into it as decoration.
Instructions
- Wash the plums, cut them in half and remove the stones. Place them in a saucepan. Cover with water. Drizzle with honey or sprinkle with erythritol and season with cinnamon.
- Cook until completely soft, then place in a blender and blend until smooth.
- Pour it back into the pot and add cream. Bring to a boil, and it's ready.
- Cool completely.
- Serve cold. Grate dark chocolate over it when serving.
