Ingredients

For the grilled chicken breast

  • 2 slices (200 g) chicken breast fillet
  • 2 tablespoons Grill Poultry Seasoning
  • 2 tablespoons extra virgin olive oil

For the potato salad

  • 6 small potatoes
  • 4 tablespoons chimichurri sauce
  • ½ red onion
  • 1 pinch freshly ground sea salt

Instructions

  • Grilled chicken breast:
    Clean the chicken breast thoroughly, making sure there are no bone fragments left. Slice it and pound it thin. Season with Grill Poultry Seasoning. Drizzle with olive oil and mix well. Let it marinate for 15-20 minutes, then grill on both sides in a hot grill pan or on an outdoor grill over direct heat. Once cooked, remove from the heat, cover, and let it rest for at least 5 minutes.
  • Potato salad:
    Wash the potatoes and boil them in lightly salted water with the skins on until tender. Let them cool, then peel them. Dice the potatoes and place them in a mixing bowl. Season with salt. Drizzle with chimichurri sauce and add thinly sliced red onion. Mix thoroughly and serve alongside the grilled chicken breast.
  • Tip: You can also chill the potato salad before serving.
