Melted cheese in hot soup? Yes. It’s called Kaspressknödel soup (Käsenodelsuppe). I first tasted this delicacy in Austria, in a small restaurant. I was served a hot vegetable soup with a bread dumpling floating proudly on top. Its enormous size was surprising, and it was strange to find it in soup, but what surprised me most was that it contained cheese. As I cut it open, the melted cheese melted softly in the hot soup. It was very delicious. I decided to make it at home, in a diet version.

I looked at a few Austrian recipes. Most of them said to fry them in oil, but I wanted to make them diet-friendly, so I baked them in the oven. I used very little fat. My homemade bread roll recipe came in very handy. This is what I used: >>> Homemade bread roll recipe here.

Instead of large dumplings, I made thin pancakes. This way, they cook more easily. Most recipes, including this one, call for mountain cheese. In the absence of this, I used Gouda cheese.

What is Kaspressknödel?

Kaspressknödel literally translates as cheese dumplings pressed flat. This is a specialty of western Austria, eaten as an addition to soup, as a side dish, or as a main course with sauerkraut. It is often served with green salad and a few radishes.

Regional cheese varieties are used in all cases. In Salzburg, it is made with beer cheese, and in Tyrol with mountain cheese or gray cheese.

Tip: You can also season it with fresh marjoram, thyme, or other herbs.

What kind of soup should you put it in?

Since the emphasis is on the flatbread and not the soup itself, a hearty soup or vegetable soup goes best with it. But it is also very tasty with meat soup. I recommend this diet chicken soup to go with it.

Ingredients

  • 100 g whole grain bread or rolls
  • 50 ml milk
  • 10 g butter
  • ½ red onion
  • 2 eggs
  • 1 teaspoon salt
  • 100 g Gouda cheese
  • ½ bunch fresh parsley
  • 5 tablespoons oat flour

Instructions

  • You can also use my homemade rolls for this recipe. Homemade roll recipe here.
    Cut the rolls (or bread) into 1 cm cubes. Place them on a baking tray lined with baking paper and bake at 200 °C (392°F) until golden brown.
    Cut the cheese into small cubes. Set aside.
  • Melt the butter in a small saucepan and fry the onion until golden brown. When ready, remove from the heat and pour in the milk. Stir. Add the fried bread cubes. Stir thoroughly, then pour into a larger mixing bowl.

  • Add the salt, parsley, whole eggs, and cheese. Add the flour and mix everything together.
  • Place 4 piles of the mixture on a baking tray lined with baking paper. Flatten them to form 4 equal-sized patties. Place in an oven preheated to 200°C and bake for 20 minutes.
  • When it's ready, you can immediately add it to a bowl of hot soup.
