Easy autumn salad with pumpkin

You can whip up a delicious salad from leftover roasted pumpkin in just a few minutes. This delicacy is perfect for a light dinner or even a snack. If you leave out the pumpkin seed oil, it only has 156 calories. The recipe is simple:
- Choose cheese! Roasted pumpkin also goes well with creamier cheeses. If you are on a diet, choose low-fat cheeses such as feta or mozzarella.
- Add salad! Add spicy arugula or baby spinach to the salad.
- Add seeds! A little roasted walnuts or pumpkin seeds go well with the salad.

- 50 g roasted pumpkin cubes
- 40 g feta cheese
- 30 g mixed salad leaves
- 1 pinch shelled, natural pumpkin seeds
- to taste fresh parsley
Instructions

- Assembling the salad: Put two handfuls of salad mix and some fresh parsley, finely chopped or whole, into a deep plate.I recommend warming the roasted pumpkin cubes first. This will make your salad much tastier.Sprinkle the roasted pumpkin and feta cubes over your salad, then finish with some natural, shelled pumpkin seeds.
