Granola is essentially a baked muesli enriched with delicious extras that turn it into a wonderfully satisfying breakfast or snack.

What can you eat granola with?

  • Pour milk over it (plant-based milk works perfectly too)
  • Mix it into yogurt
  • Sprinkle it on the bottom and top of a dessert cup (just like in this recipe)
  • Use it to top your oatmeal
  • Enjoy it on its own as a crunchy snack
  • Serve it with fresh fruit (or with baked fruit during autumn and winter)

Homemade Granola Recipe for Fall

With Gingerbread Spices, almonds, and pumpkin seeds

Ingredients

  • 220 g large-flake rolled oats (whole grain)
  • 10 g gingerbread spice mix (I used Kotányi)
  • 1 pinch of salt
  • 60 g hulled natural pumpkin seeds
  • 60 g natural almonds
  • 80 g coconut oil
  • 80 g honey (from a local producer)

Instructions

  • Take a large mixing bowl. Pour in the rolled oats. Add the gingerbread spice mix, a pinch of salt, the pumpkin seeds, and the almonds. Mix thoroughly.
  • In a saucepan, gently heat the coconut oil together with the honey. Pour it over the oat mixture.
  • Line a baking tray with parchment paper and spread the mixture evenly on it. Place it in a preheated oven at 180 °C and bake for 20-25 minutes. Stir it twice during baking.
  • Once ready, let it cool completely, then transfer it to sealable jars. Whenever you crave some granola, you’ll just need to take it out and enjoy.
