Mozzarella grilled cheese sandwich
Italian breakfast in 5 minutes

I regularly make mozzarella hot sandwiches for breakfast. They’re not complicated, but they’re very tasty. Tomatoes and mozzarella are my favorites. With a slice of whole wheat bread, it makes for a complex, healthy breakfast. The mozzarella cheese provides protein (which has a satiating effect), while the whole wheat bread provides slow-absorbing carbohydrates (which keep you feeling full for a long time). Tomatoes are also said to have a positive effect on happiness hormones. Now I know why Italians are so cheerful! 🙂 Start your day with a cheerful, healthy Italian breakfast!

Mozzarella grilled cheese sandwich
Ingredients
- 60 g light mozzarella
- 1 tomato (or a handful of cocktail tomatoes)
- 1 slice of whole grain rye bread (80 g)
- 1 teaspoon olive oil
- 1 pinch salt
- 1 pinch dried basil
Instructions
- Preheat the oven. If possible, set it to grill mode and 200°C (392°F).
- Slice the mozzarella cheese and tomatoes. Season thoroughly with salt and sprinkle with basil. Toss to ensure that the seasoning is evenly distributed.
- Place the mozzarella and tomato slices on top of the bread, then drizzle olive oil over the top. Make sure to get some oil on the bread too, as this will make it crispier.
- Place the bread in the oven and grill for approx. 5 minutes.
- Enjoy with fresh tomatoes.
