This chicken sandwich spread with fake tartar sauce is my new favorite dinner. It’s full of protein and low in fat. Don’t be afraid of the fake tartar sauce, it won’t bite! 🙂 It doesn’t contain mayonnaise, which makes it diet-friendly. The only thing you have to wait for is the milk-baked chicken to cook. But if you prepare it the day before, you’re all set to make a quick and healthy dinner. Go for it!

Ingredients

  • 100 g Chicken baked in milk – recipe above, click on the image
  • 30 g cucumber
  • fresh parsley

For the fake tartar:

  • 10 g mustard
  • 120 g plain yogurt
  • liquid sweetener – to taste (I prefer it when it's sweet.)
  • a few drops of lemon juice
  • salt
  • freshly ground black pepper

I put this on:

  • 2 slices whole grain sliced bread

Instructions

  • It is best to prepare the milk-baked chicken the day before, so that you can use the leftover, cooled chicken for this sandwich spread.
  • Dice the chicken. Cut it into small cubes that will be easy to spread on the bread. Set aside.
  • Cut the cucumber into cubes of the same size. Set aside.
    Finely chop the parsley. Set aside.
  • Put the ingredients for the fake mayonnaise in a mixing bowl and mix thoroughly.
    Add the chicken cubes, cucumber, and parsley. Add salt if necessary.
    Mix well.
  • Spread on bread and eat immediately.
