You just toss everything into an ovenproof dish, and while the ingredients roast to perfection, you cook the pasta. Once that’s done, simply mix everything together, sprinkle over a generous amount of cheese, and it’s ready to eat. The tomatoes, zucchini, and feta cheese give it delicious summer flavors. Roasted Vegetable Pasta with Grilled Sausage
Ingredients
- 250 g durum wheat penne pasta
- 200 g light feta cheese
- 200 g grilled sausage
- 140 g cherry tomatoes
- 1 sweet pointed pepper
- 2 medium zucchinis
- salt
- freshly ground black pepper
- dried basil
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
For Serving
- 1 bunch fresh parsley
- 30 g Parmesan cheese
Instructions
- Cook the pasta in salted water until al dente.
- Preheat the oven to 200°C (392°F) using top and bottom heat with fan.
- Take an ovenproof baking dish and add:diced zucchinidiced feta cheesediced kapia pepperhalved cherry tomatoessliced grilled sausage
- Drizzle with olive oil and balsamic vinegar. Season with salt, pepper, and basil. Mix everything thoroughly.
- Place the dish in the preheated oven and bake for about 15 minutes, or until the ingredients are nicely roasted and slightly crispy.
- Once baked, stir everything together, then add the cooked and drained pasta. Mix well.
- Serve warm. Before serving, sprinkle with grated Parmesan cheese and finely chopped fresh parsley.
