Mozzarella grilled cheese sandwich

Ingredients

  • 60 g light mozzarella
  • 1 tomato (or a handful of cocktail tomatoes)
  • 1 slice of whole grain rye bread (80 g)
  • 1 teaspoon olive oil
  • 1 pinch salt
  • 1 pinch dried basil

Instructions

  • Preheat the oven. If possible, set it to grill mode and 200°C (392°F).
  • Slice the mozzarella cheese and tomatoes. Season thoroughly with salt and sprinkle with basil. Toss to ensure that the seasoning is evenly distributed.
  • Place the mozzarella and tomato slices on top of the bread, then drizzle olive oil over the top. Make sure to get some oil on the bread too, as this will make it crispier.
  • Place the bread in the oven and grill for approx. 5 minutes.
  • Enjoy with fresh tomatoes.
