Take a large mixing bowl. Pour in the rolled oats. Add the gingerbread spice mix, a pinch of salt, the pumpkin seeds, and the almonds. Mix thoroughly.
In a saucepan, gently heat the coconut oil together with the honey. Pour it over the oat mixture.
Line a baking tray with parchment paper and spread the mixture evenly on it. Place it in a preheated oven at 180 °C and bake for 20-25 minutes. Stir it twice during baking.
Once ready, let it cool completely, then transfer it to sealable jars. Whenever you crave some granola, you’ll just need to take it out and enjoy.
