Pasta salad in a glass? Why not? Prepare a light and healthy lunch and serve it in a pretty little glass for a gorgeous presentation. Trust me, it will make the meal taste completely different. The Boursin cheese raises the quality of this recipe so much that it simply has to be served with a little flair. Getting Boursin cheese may not be the most fun thing in the world. But you’ll find it in larger Spar stores and at the Auchan cheese counter. You’ll have almost no chance of finding it anywhere else. I’d say that other cheeses would work too, but I haven’t actually found anything tastier than this. Give it a try!

Ingredients

  • 125 g Zott Zottarella mozzarella cheese with basil
  • 100 g durum spaghetti pasta (measured dry, 100 g)
  • 50 g Boursin soft cheese (garlic and spice)
  • 20 g sweet pointed pepper
  • 4 romaine lettuce leaf (other salads are also acceptable)
  • 1 tomato
  • 1 stalk of celery
  • salt
  • dried, crumbled basil
  • 1 teaspoon olive oil
  • ½ lemon juice

For decoration

  • 2 teaspoons shelled, natural pumpkin seeds

Instructions

  • Cook the spaghetti in salted water until al dente. Drain and set aside. It should still be hot when you use it.
  • Cut the sweet pointed pepper and tomatoes into small cubes. Season the tomatoes with salt.
  • Wash the lettuce and chop it up.
  • Cut the mozzarella cheese into small cubes, season with salt, and drizzle with olive oil and lemon juice. Mix together.
  • Take two pretty glasses and layer the following ingredients:
    salad leaves, tomatoes and mozzarella cheese seasoned with herbs at the bottom
    half of the spaghetti on top
    crumble half of the Boursin cheese on top
    tomatoes, celery and sweet pointed peppers again
    add the rest of the pasta
    crumble the second half of the Boursin cheese on top
    then tomatoes, celery, and sweet pointed peppers again
    drizzle with a little lemon juice
    garnish with shelled, plain pumpkin seeds
