Dill sauce with potato dumplings, zucchini, and roasted meat

Dill sauce goes perfectly with summer zucchini dishes, roasted meat, fish, and potato dumplings. I made this combination for Sunday lunch in the spirit of healthy eating. The protein can be any meat or fish, roasted or steamed. You can find the recipe for potato dumplings here. Serve with a large portion of steamed zucchini, which is low in calories but delicious and filling. Drizzle with a mouthwatering dill sauce and enjoy the harmony of flavors and textures. Dill sauce

Dill sauce is nothing more than a béchamel sauce with dill added. So if you know how to make a good béchamel sauce, you know how to make dill sauce. 🙂 If you don’t, the recipe below will help you. One serving contains 13 grams of fat, which may be too much for a diet. You can reduce this by omitting the cream and using water instead. It will still be delicious.

Potato dumplings

Zucchini
For this recipe, I used 600 g of zucchini. I washed it, cut it in half lengthwise, and diced it. I boiled it in salted water.
Roasted meat

I sliced 500 grams of chicken breast and sprinkled it with 15 grams of fried chicken seasoning. I poured a tablespoon of olive oil over it and mixed it thoroughly. I fried it in a non-stick pan.

Dill sauce
Ingredients
- 1 bunch of fresh dill (frozen works too)
- 30 g butter (about 82% fat, e.g., cultured butter)
- 30 g oat flour
- 100 g cooking cream (20% fat)
- 300 g milk (1,5% fat)
- Salt, to taste
Instructions
- Wash and thoroughly dry the dill, then finely chop it. Set aside.
- Gently heat the milk.
- In a saucepan, melt the butter – watch carefully to prevent burning.Add the oat flour, stir well, and lightly roast it.
- Gradually pour in the warmed milk, stirring to avoid lumps. Add the cooking cream and bring the mixture to a creamy consistency. Season with salt.
- Stir in the chopped dill, and the sauce is ready.
