This time I made coconut granola because the fall granola was such a big hit and disappeared very quickly. Granola is basically baked muesli enriched with delicious extras that turn it into a super healthy breakfast or snack packed with nutritious ingredients. Now I even bring granola as a gift when visiting friends or family, beautifully decorated in a small jar. It contains absolutely no additives. However, it’s highly addictive. Ever since jars filled with granola appeared on the shelves of my pantry, I somehow find myself going there more often. 🙂

The locally produced honey used in the granola caramelizes during baking, creating a rich flavor and a crispier texture that takes traditional muesli to a whole new level. Coconut granola is truly delicious both for breakfast and as a snack.

What Can You Eat Granola With?

  • Pour milk over it (plant-based milk works too)
  • Mix it into yogurt
  • Sprinkle it on the bottom and top of dessert cups (like in this recipe)
  • Use it to crown your oatmeal
  • Crunch on it by itself
  • Enjoy it with fresh fruits (or with baked fruits during autumn and winter)

Ingredients

  • 100 g desiccated coconut
  • 220 g large rolled oats (whole grain)
  • 1 pinch of salt
  • 80 g acacia honey (preferably from a local producer)
  • 80 g coconut oil

Instructions

  • Take a large mixing bowl. Add the rolled oats, desiccated coconut, and a pinch of salt. Mix thoroughly.
  • In a saucepan, gently warm the coconut oil and honey together. Do not boil it — it only needs to become lukewarm. Pour the mixture over the oats.
  • Line a baking tray with parchment paper and spread the mixture evenly on it. Bake in a preheated oven at 180°C / 350°F for 20-25 minutes, or until golden brown. Stir it once during baking.
  • Once ready, let it cool completely on the tray, then transfer it into sealable jars. Whenever you crave a little granola, just open a jar and enjoy.
