Take a large mixing bowl. Add the rolled oats, desiccated coconut, and a pinch of salt. Mix thoroughly.
In a saucepan, gently warm the coconut oil and honey together. Do not boil it — it only needs to become lukewarm. Pour the mixture over the oats.
Line a baking tray with parchment paper and spread the mixture evenly on it. Bake in a preheated oven at 180°C / 350°F for 20-25 minutes, or until golden brown. Stir it once during baking.
Once ready, let it cool completely on the tray, then transfer it into sealable jars. Whenever you crave a little granola, just open a jar and enjoy.
