Simple Broccoli Tuna Salad - The Best Diet-Friendly Dinner

Looking for a healthy dinner recipe? Want to cut back on carbs in the evening? Meals like this can be hard to find, but not impossible. With just a few simple ingredients, you can make an incredibly delicious tuna salad. Although, to be honest, “salad” might be a bit of an exaggeration for this recipe – but since it contains vegetables, what else could we call it?

You can also use cauliflower instead of broccoli, and season the oil however you like, for example with oregano or basil. I have to admit, I sometimes add a little chili or even some Hungarian “Erős Pista” chili paste because I love spicy food. Try this ridiculously simple broccoli tuna salad recipe!

Ingredients

  • 300 g broccoli (1 medium-sized head)
  • 1 can of tuna in olive oil
  • 1 pinch of salt
  • 1 pinch of sweet red paprika powder (Hungarian)
  • 1 pinch of sliced almonds

Instructions

  • Cut the broccoli into florets, wash it thoroughly, and cook it in cold salted water. Be careful not to overcook it – it should stay slightly crunchy.
Tip: Add about 200 ml of sparkling water (or a pinch of baking soda) to the cooking water to help the broccoli keep its vibrant green color after cooking.
  • Drain the oil from the tuna can into a bowl. Mix in the spices and set aside.
  • Toast the sliced almonds in a dry frying pan without oil. Watch carefully, as they can burn quickly. Once toasted, immediately transfer them to a bowl.
  • Drain the broccoli and place it into a serving bowl. Add the tuna on top. Drizzle with the seasoned oil and sprinkle with the toasted almond slices.
  • Serve and enjoy while still warm!
