Roasted Vegetable Pasta with Grilled Sausage

Pasta and sausage are always a great match. What’s fantastic about this pasta dish is how incredibly quick and easy it is to make. Literally. You just toss everything into an ovenproof dish, and while the ingredients roast to perfection, you cook the pasta. Once that’s done, simply mix everything together, sprinkle over a generous amount of cheese, and it’s ready to eat. The tomatoes, zucchini, and feta cheese give it delicious summer flavors. Roasted Vegetable Pasta with Grilled Sausage

Ingredients

  • 250 g durum wheat penne pasta
  • 200 g light feta cheese
  • 200 g grilled sausage
  • 140 g cherry tomatoes
  • 1 sweet pointed pepper
  • 2 medium zucchinis
  • salt
  • freshly ground black pepper
  • dried basil
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar

For Serving

  • 1 bunch fresh parsley
  • 30 g Parmesan cheese

Instructions

  • Cook the pasta in salted water until al dente.
  • Preheat the oven to 200°C (392°F) using top and bottom heat with fan.
  • Take an ovenproof baking dish and add:
    diced zucchini
    diced feta cheese
    diced kapia pepper
    halved cherry tomatoes
    sliced grilled sausage
  • Drizzle with olive oil and balsamic vinegar. Season with salt, pepper, and basil. Mix everything thoroughly.
  • Place the dish in the preheated oven and bake for about 15 minutes, or until the ingredients are nicely roasted and slightly crispy.
  • Once baked, stir everything together, then add the cooked and drained pasta. Mix well.
  • Serve warm. Before serving, sprinkle with grated Parmesan cheese and finely chopped fresh parsley.
