Vegan Sandwich with White Bean Stew
Try this spontaneous recipe and elevate your morning meal!

For a previous recipe (Spaghetti with White Bean Sauce), I made a divine white bean ragout. Even back then, I knew it was worth making more than once. This time, I cooked a bigger batch and had a little leftover. My morning sandwich needed something saucy, so I spontaneously added the white bean ragout. I was pleasantly surprised by the complexity of the flavors. I put it in a vegan croissant from Aldi and had a big serving of salad on the side. It’s perfect for breakfast or dinner if you want to take a break from deli meats and cheeses and explore something new. 🙂 This is a completely different kind of sandwich. Give it a try!

Instructions
Cut the croissant in half and fill it with the white bean ragout. You can spread the ragout on the pastry either warm or cold. Keep in mind that if the ragout is too hot, it will have a much runnier consistency.
