Gingerbread muffins are one of my favorites on cold winter days. I believe that gingerbread spices (cinnamon, cloves) bring warmth even in harsh weather. After baking, a delicious aroma fills my home, which almost immediately brings a festive mood. I think it’s the perfect dessert to accompany coffee.

What’s on top?
I mixed protein powder and plain yogurt to make a cream. I think it goes well with this muffin. It has a slight coffee flavor.
Ingredients and preparation: Mix 25 g Tiramisu flavored protein powder and 100 g plain yogurt in a bowl.

Tips for muffins:
- It is worth using a silicone muffin mold, because this will ensure that the muffins come out easily after baking. I place the silicone mold in a metal mold and bake it that way.
- The ingredients must be mixed until fluffy, because this will allow the muffins to rise high when exposed to heat. Use a whisk.
- Do not overfill the muffin tin, as they will spill over and the tops will not look nice. If you fill them 3/4 full, they will rise just enough during baking to reach the top of the tin.

Ingredients
- 100 g butter or coconut oil
- 150 g xylitol
- 2 eggs
- 100 g oat flour
- 100 g whole wheat flour
- 6 g baking powder
- 6 g gingerbread spice mix
- 200 ml plain yogurt
Instructions
- First, preheat the oven to 200°C or 392°F. (I baked it using the bottom-top and air circulation modes.)
- Cut the butter into cubes and melt it in a saucepan. It should not be hot, just lukewarm.
- Take out a large mixing bowl. Pour in the xylitol. Add the melted butter and mix with a whisk until fluffy.
- Add the whole eggs. Continue whisking with a whisk.
- Sprinkle the honey cake with the spice mixture. Mix, then put down the whisk and switch to a wooden spoon for further mixing.
- Add the two types of flour, then sprinkle in the baking powder. Pour in the plain yogurt. Stir with a wooden spoon. It should be creamy.
- Get out your muffin tin. (I use a silicone mold and place it inside a metal tin.) Use a spoon to fill the silicone molds with the batter. Only fill the molds ¾ full, otherwise the batter will spill over and the tops won't look nice.
- Three pieces will remain from the 12-piece mold, so this will be another baking round. Place the filled molds in the oven and bake at 200°C for 20 minutes.
- When ready, remove from the oven and leave to cool completely.
- I made a cream topping from plain yogurt and tiramisu protein powder, but it's also delicious on its own.
