Greek yogurt dessert with fruit and sponge cake
Make diet sponge cake from muffins!

I have wanted to develop a healthy, diet-friendly sponge cake recipe for a long time. It is difficult to make a good sponge cake, especially a diet-friendly one. This week, I experimented with muffin recipes. It seems I have managed to put together a very good basic recipe, which is also perfect for sponge cakes. You can find it here: Basic muffin recipe
Fortunately, it turned out very tasty, so it “fed itself.” I was nibbling on one of these delicacies when it occurred to me that this muffin would make the perfect sponge cake. The texture was very good, and it was sweet enough. My brain immediately started working, and I took out a glass. I crumbled half of the muffin into the bottom of the glass. Then I poured half a carton of plain yogurt mixed with sweetener on top. I diced a very juicy nectarine and sprinkled half of it on top. Then I added a little more crumbs from the rest of the muffin. I poured yogurt over it and topped it with the rest of the nectarine. I couldn’t wait to dig in with my spoon. 🙂
How was it?
It was like those sponge cake and yogurt peach cakes I used to eat as a child. The muffin played the role of sponge cake well. The yogurt was sweet and creamy, perfectly complementing the juicy flavor of the nectarine.
What did you like most about this recipe?
On the one hand, the taste. On the other hand, the fact that it can be made quickly and easily from leftover muffins. Try it yourself!

Yogurt cup recipe
Ingredients:
- 1 muffin – diet recipe here
- 1 container of plain yogurt (choose Greek yogurt or some kind of live culture yogurt)
- liquid sweetener
- fruit (whatever is in season. For example, nectarines, blueberries, oranges, strawberries, etc.)
Preparation
I crumbled half of the muffin into the bottom of the glass. I poured half a carton of natural yogurt mixed with sweetener on top. I diced a very juicy nectarine and sprinkled half of it on top. Then I added a little more crumbs from the rest of the muffin. I poured yogurt over it and topped it with the rest of the nectarine.
Update: It also works very well with orange on fall or winter days! 🙂
