A simple tortilla filling recipe is a real treasure on those days when you want to quickly whip up something delicious. This breakfast tortilla recipe is an easy yet filling dish that will give you a boost for the day. Tortilla-based recipes have many benefits, as I’ve written about before. As part of my diet, I often make different variations, mainly for dinner, but I also have a favorite breakfast recipe that I’m going to share with you now. I usually make this wrap with fried eggs, yogurt dip, carrot sticks, and fresh salad. When you roll it up and take a bite, the carrots are crunchy, which combines with the soft eggs to create heavenly flavors. Try it yourself!

Eating tortillas for breakfast can be a great choice for several reasons:

  1. Quick and easy: Tortillas are quick to make and easy to vary, making them ideal for busy mornings.
  2. Nutritious: Tortillas are the perfect base for protein-rich foods such as eggs, meat, or plant-based protein sources, and they can also be easily combined with vegetables for a balanced, nutrient-rich breakfast.
  3. Carbohydrate source: Tortillas provide energy at the start of the day, especially if you choose whole grain versions, which are digested more slowly and keep you feeling full for longer.
  4. Variable: Tortillas can be varied in endless ways: you can fill them with fried eggs, avocado, vegetables, or even yogurt sauces, so they never get boring.
  5. Easy to carry: If you eat breakfast on the go, tortillas are a practical solution because they are easy to pack and take with you.

Tortilla wraps – store-bought or homemade?

The easiest way is to use store-bought tortillas, but you can also make them at home if you like. You can choose whole wheat or corn flour tortillas, depending on which fits your diet better.

Interesting fact: an average tortilla contains approximately 180-200 calories, while a serving of rice can contain up to 350 calories.

How to cook tortilla wraps perfectly?

Heat up the pan and fry both sides of the tortilla without oil. It will only take a few seconds per side, so keep an eye on the color – when it starts to brown a little, flip it over and fry the other side.

It is important not to overcook it, because then it will harden and be difficult to roll up.

Once ready, spread your favorite topping on it while it’s still warm and fill it with diet-friendly delicacies!

Ingredients

  • 1 whole wheat tortilla sheet
  • 1 egg
  • 1 coffee spoon olive oil
  • 1 small carrot
  • 1 handful mixed salad leaves

For the Italian sauce:

  • 125 g plain yogurt
  • 1 pinch salt
  • 1 pinch dried oregano
  • 1 pinch dried basil

Instructions

  • Cut the carrots into matchsticks. Set aside.
  • Prepare the Italian dressing: mix a little basil and oregano into 1 tub of plain yogurt, then season with salt and pepper.
  • Fry the eggs. Fry the tortilla sheets as well. (You can use the same pan as for the eggs.)
  • Spread Italian sauce on the baked sheet, then place the fried eggs on top, sprinkle with chopped carrots and a large handful of salad.
  • Eat it while it's still warm.
