Ingredients

  • 1 whole wheat tortilla sheet
  • 1 egg
  • 1 coffee spoon olive oil
  • 1 small carrot
  • 1 handful mixed salad leaves

For the Italian sauce:

  • 125 g plain yogurt
  • 1 pinch salt
  • 1 pinch dried oregano
  • 1 pinch dried basil

Instructions

  • Cut the carrots into matchsticks. Set aside.
  • Prepare the Italian dressing: mix a little basil and oregano into 1 tub of plain yogurt, then season with salt and pepper.
  • Fry the eggs. Fry the tortilla sheets as well. (You can use the same pan as for the eggs.)
  • Spread Italian sauce on the baked sheet, then place the fried eggs on top, sprinkle with chopped carrots and a large handful of salad.
  • Eat it while it's still warm.
