Cut the carrots into matchsticks. Set aside.
Prepare the Italian dressing: mix a little basil and oregano into 1 tub of plain yogurt, then season with salt and pepper.
Fry the eggs. Fry the tortilla sheets as well. (You can use the same pan as for the eggs.)
Spread Italian sauce on the baked sheet, then place the fried eggs on top, sprinkle with chopped carrots and a large handful of salad.
Eat it while it's still warm.
