This cabbage pasta recipe is simple yet delicious. It’s a wallet-friendly lunch that you can make healthier by using durum wheat pasta and olive oil. I even added a little chimichurri sauce at the end, which made it really spicy. As strange as it sounds, it’s just as delicious. 🙂 Give it a try!

Ingredients
- 750 g cabbage
- 300 g durum dry pasta (for example cube-shaped)
- 4 tablespoons olive oil
- salt
- freshly ground black pepper
Instructions
- Clean the cabbage and then grate it. Choose a cheese grater with larger holes. But if you have a food processor at home, you can do this more quickly and conveniently. Just cut the cabbage into larger pieces and chop it up in smaller batches. Put everything in a large bowl.
- Season thoroughly and leave to stand for at least half an hour.
- Meanwhile, cook the pasta in salted water until al dente. Drain and set aside.
- After half an hour, squeeze the juice out of the cabbage and place the dry cabbage in a saucepan or deep frying pan. Pour the oil over it. Season with salt and pepper.
- Stir fry it. It can burn easily, so stir it often. It may seem dry at first, but don't add water! Steam it for about 30 minutes, during which time it will release some juice. It will shrink and turn brownish in color. Taste it, and if it is soft and sufficiently salty and peppery, it is ready.
- Add the cooked pasta and serve warm.
