Oatmeal Chocolate Cookies
Perfect with Your Afternoon Coffee Too!

Do you enjoy nibbling on something sweet with your afternoon coffee? Then you’re going to love these chocolate cookies. You can make them with sugar-free chocolate, but they also turn out perfectly with 85% Lindt dark chocolate. They are made with healthy ingredients and packed with fiber, making them a great snack to take with you to work or school in a container.



Oatmeal Chocolate Cookies

Ingredients
- 100 g xylitol
- 2 eggs
- 15 g coconut oil
- 150 g oat flour
- 50 g rolled oats
- 1 packet baking powder (12 g)
- 1 handful walnuts, halved (40 g)
- 60 g dark chocolate (I used 85% Lindt chocolate)
Instructions
- Place the xylitol, slightly melted coconut oil, and eggs into a mixing bowl, then whisk thoroughly until combined.
- Add the oat flour, rolled oats, and baking powder, then mix well with a spoon.
- Cut the chocolate into small cubes and add half of it to the mixture.
- Chop the walnuts into smaller pieces and stir them into the dough.
- Line a baking tray with parchment paper and place tablespoon-sized mounds of dough onto it. Leave enough space between them, as they will spread while baking. Flatten them slightly as well – the thinner they are, the crispier the cookies will become.
- Sprinkle the remaining chocolate pieces on top.
- Bake in a preheated fan oven at 190°C / 374°F for 25-30 minutes.
