Place all the dough ingredients in a mixing bowl and knead thoroughly. Shape it into a ball, and let it rest in a warm place, covered, for at least 1 hour.
After rising, put the dough on a floured board and roll it out into a rectangle (you may need a bit of extra flour underneath). Roll to about 0.5 cm thickness.
Brush the surface with the beaten egg, then sprinkle with the grated cheese.
With a sharp knife, cut the dough into strips about 10 cm long and 1.5 cm wide.
Place the strips on a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C or 392°F (top & bottom heat with fan) for about 20 minutes, or until the tops are golden brown.
Let them cool before serving.
