Roasted cauliflower with spinach barley and ricotta

Ingredients

For the spinach barley:

  • 150 g hulled barley
  • 400 ml water
  • salt
  • freshly ground black pepper
  • 1 clove garlic
  • 5 portions of frozen spinach

For roasted cauliflower

  • 2 large heads of cauliflower
  • 1 tablespoon olive oil
  • 30 g vegetable seasoning (I used Kotányi Grill Vegetable Spice Salt)

For the ricotta dip:

  • 250 g ricotta
  • 1 pinch dried, crumbled basil
  • 1 pinch dried, crumbled oregano
  • salt
  • a few drops of olive oil

Instructions

  • Preparation of the barley: Wash the barley and soak it for an hour. Drain the water. Then place it in boiling water. Add salt. Cover the pot halfway and simmer for 30 minutes over medium heat, stirring occasionally.
    After 30 minutes, add the spinach portions. Season with salt and pepper. Add the thinly sliced garlic. Stir, then cover and simmer for another 15 minutes or until tender.
  • Preparation of roasted cauliflower: Remove the leaves from the cauliflower, cut it into florets and wash it. Drain thoroughly so that no water remains on it. Place on a baking sheet lined with parchment paper and drizzle with olive oil. Season and mix thoroughly.
    Bake in a preheated oven at 200°C (392°F) for about 20-25 minutes until crispy.
  • Ricotta dip: All you have to do is mix together the ingredients for the ricotta dip.
  • When everything is ready, serve the roasted cauliflower alongside the barley. Serve with the ricotta dip.
