Feta cheese and zucchini spread

Ingredients

  • 4 small zucchini (Choose ones that are small and firm, because they taste better and are not yet soft and mushy in the middle.)
  • 1 tablespoon extra virgin olive oil
  • 1 clove garlic (or two, if you like more garlic)
  • 1 teaspoon lemon juice
  • 1 pinch dried, crumbled oregano
  • salt
  • freshly ground black pepper
  • 40 g feta cheese

Instructions

  • Wash the zucchini, cut off both ends, and dice it.
  • Peel and slice the garlic.
  • Pour a little oil into a hot, high-sided frying pan and add the garlic slices. Fry for a few minutes, then add the courgette pieces. Stir until they start to brown.
  • Reduce the heat to medium and continue to simmer with the lid on. Stir occasionally to prevent burning. Simmer for a total of 30 minutes. During this time, the zucchini will soften and become creamy.
  • Then remove from the heat and season with salt, pepper, crushed oregano, and lemon juice. Add a dash of oil and stir.
  • If you prefer a creamier texture, blend it at the end.
  • Serve lukewarm. Spread on bread and crumble feta cheese on top.
  • Tip: it can be even tastier if you add onion (purple or red). Fry it together with the garlic, then add the zucchini.
