Wash the zucchini, cut off both ends, and dice it.
Peel and slice the garlic.
Pour a little oil into a hot, high-sided frying pan and add the garlic slices. Fry for a few minutes, then add the courgette pieces. Stir until they start to brown.
Reduce the heat to medium and continue to simmer with the lid on. Stir occasionally to prevent burning. Simmer for a total of 30 minutes. During this time, the zucchini will soften and become creamy.
Then remove from the heat and season with salt, pepper, crushed oregano, and lemon juice. Add a dash of oil and stir.
If you prefer a creamier texture, blend it at the end.
Serve lukewarm. Spread on bread and crumble feta cheese on top.
Tip: it can be even tastier if you add onion (purple or red). Fry it together with the garlic, then add the zucchini.
