Creamy Pasta Salad with Yogurt Dressing

Ingredients

  • 200 g durum farfalle (bow-tie) pasta
  • salt

Vegetables:

  • 1 cucumber
  • 1 green bell pepper
  • 1 red (purple) onion

Other mix-ins:

  • 100 g pork loin or chicken breast ham (at least 85% meat content)
  • 50 g Gouda cheese (or any other cheese)

For the dressing:

  • 250 g plain Greek yogurt
  • 60 g light mayonnaise
  • 1 teaspoon salt

Instructions

  • Cook the pasta in salted water until al dente. Drain and set aside.
  • Wash the cucumber and bell pepper, then cut into small cubes. Place into a large mixing bowl. Finely chop the onion and add to the vegetables. Sprinkle some salt and mix well.
  • Dice the ham and cheese into small cubes and add them to the bowl with the vegetables.
  • Add the drained pasta to the bowl.
  • In a separate bowl, stir together the yogurt, light mayonnaise, and salt to make the dressing. Then pour the dressing over the pasta mixture. Toss everything thoroughly to combine.
  • Serve immediately.
